Bon Appétit

I am very excited to finally finish our 3 week menu!  I wrote my shopping list on Sunday and only bought what I needed, woo hoo!  No more throwing away stuff on Fridays, no more running out of things in the middle of the week.  Now I just have to stick with it :)

So here it is.  Remember it's all vegetarian or vegan I should say.  Dan started the vegan thing about 3 months ago, he feels great!  So the cheese we are using is almond cheese (surprisingly good) and the "meat" you see, like chicken or pepperoni on the pizza is made out of grains mostly, some have a bit of soy.  Nothing is complicated and I don't spend everyday in the kitchen either.  I think it's going to work great!

I promised I would share, so here is Week One!  Feel free to email me if you are interested in any recipe.  Nothing takes more than 20 minutes to prepare.  Enjoy!  I'm hungry already!

I replace the eggs for Ener-G (egg replacer from Whole Foods), but of course you don't have to.

  3. This is awesome, so glad you posted it! I'm going to have to add a few of these for alternative meal options to my weekly menu :). I've been following mine for 1.5 weeks now and honestly, it's easy to follow if everything is in the fridge. And it sure beats the daily..."what do you want to eat for dinner...?" frustrations :)!. Enjoy your mock tuna sandwich today! And what brand/kind of noodles are you using for tonights meal?
